MARGARITA 1 can of Bacardi frozen margarita mix1/2 can of tequila (same can)1/4 can triple sec – one tray’s worth of ice cubes1 limehappiness (optional, but extremely likely after you take a sip) Mix all ingredients in blender.  Run lime around rims of glasses, roll in coarse salt, serve.  Oh, and serve with a wedge of lime if you can remember and if you have the patience to wait an extra 3 seconds, which you may not.

POMEGRANATE-ROSEMARY ROYALE 1/4 cup water1 tablespoon sugar2 teaspoons fresh rosemary leaves1/2 cup pomegranate juice2 cups Champagne or sparkling wine Start by making a simple syrup: Combine 1/4 cup water and sugar in a small saucepan and bring it to a simmer, stirring until the sugar dissolves. Remove from heat. Add the rosemary and let it stand for 30 minutes. Strain the syrup through a sieve into a bowl and discard the solids. Next, pour 2 tablespoons pomegranate juice and 1 tablespoon of the rosemary syrup into 4 Champagne glasses. Top each serving with 1/2 cup Champagne (or other sparkling wine) and garnish with a small sprig of rosemary. Serve immediately.

KEY LIME PINEAPPLE CITRUS MARTINI 2 key limessugar8 oz pineapple juice6 oz citrus vodka Cut limes in half and rub around the edge of two martini glasses.  Pour some sugar on a plate and run the rims of the glasses through it. Pour pineapple juice and vodka into a shaker with ice. Squeeze one of the key limes into the shaker. Shake well and pour into glasses. Garnish glasses with a lime wedge or cross section.

POMEGRANATE-CHAMPAGNE PUNCH 1 1/2 cups pomegranate juice 1 cup pear nectar 1/4 cup orange-flavored liqueur, such as Grand Marnier or Triple Sec 1 bottle (750 ml) sparkling wine, such as Champagne, Prosecco, Cava, etc. In a large pitcher, combine pomegranate juice, pear nectar, and orange-flavored liqueur. Slowly add sparkling wine. Serve over ice.

PINA COLADA 6 oz light rum 6 oz cream of coconut 8 oz pineapple juice 2 oz heavy cream 1 1/2 cups frozen pineapple 1 cups ice Blend all ingredients at high speed. Serve in a chilled class and garnish with a slice of pineapple.

WATERMELON-CUCUMBER REFRESHER 3 parts (3 ounces) vodka 1 part (1 ounce) triple sec 2 parts (2 ounces) watermelon-cucumber-mint juice 1 part (1 ounce) lime juice Pour all ingredients into a cocktail shaker with ice and shake for about 15 seconds. Strain into a chilled cocktail glass. Garnish with a cucumber slice and sprig of mint or slice of watermelon. Watermelon-Cucumber-Mint Juice 2 parts (2 cups) chopped watermelon 1 part (1 cup) peeled and chopped cucumber 2 sprigs of mint Blend all ingredients together and strain through fine-mesh strainer.

PEACHY KEEN (PEACH + BOURBON COCKTAIL) 3 parts (1.5 ounces)  bourbon 2 parts (1 ounces) peach-honey liqueur 1 part (.5 ounces) lemon juice 2 peach slices, frozen (optional) Pour all ingredients into a cocktail shaker with ice and shake for about 15 seconds. Strain into a chilled glass. If using, place two frozen peach slices in the glass. Peach-Honey Liqueur 2 parts (1/2 cup) water 2 parts (1/2 cup) honey 2 parts (1/2 cup) peeled and chopped peaches 3 parts (3/4 cup) vodka Boil the water, honey, and peaches for about three minutes in a covered saucepan. Let it cool, strain out the solids, and refrigerate the liquid. Combine the vodka and the cooled peach mixture. Store in a bottle as you would other liqueur. Refrigeration isn’t necessary.

STRAWBERRY BASIL MOJITO 3 basil leaves, torn 3 strawberries, sliced 1 1/2 ounces white rum 1 ounce simple syrup 1/2 ounce lime 4 ounces club soda Muddle the basil, strawberries, and simple syrup at the bottom of a highball or Collins glass. Add rum and lime juice, then fill with ice. Top off with club soda.

CRANBERRY GINGER COCKTAIL 1.5 oz vodka 4 oz ginger beer (Reed’s Original Ginger Brew) handful of fresh cranberries Combine the vodka and ginger in a glass with ice. Place the cranberries in a small bowl and use a muddler (or a spoon or fork) to smash them up a bit. If you want a lot of tang, really mash them up. Pour the cranberries and any juice you squeezed out on top of the cocktail and give it a quick stir.

MINT JULEP 4 sprigs mint (plus one for garnish) 1 teaspoon powdered sugar 2 teaspoons cold water 2 1/2 ounces (70 ml) bourbon Muddle the mint leaves together with the sugar and water in a highball. Fill the glass with crushed ice and pour in the bourbon. Slowly stir, adding more ice until the glass is filled with ice. Garnish with sprig of mint.
